Ingredients:
1 3/4 cup of oats
3 egg whites
3/4 cup Chocolate Shakeology
1 cup unsweetened applesauce
1 tsp. vanilla extract
1/2 cup plain Greek yogurt
1/2 tsp cream of tarter
1/4 tsp salt
1 cup hot water
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 cup truvia baking blend (or Stevia)
1/2 cup semi-sweet chocolate chips
Directions:
1. Line muffin pan with foil liners or spray with non-stick cooking spray.
2. Pre-heat oven to 350 degrees.
3. Mix everything, except the chocolate chips, in a blender on LOW until smooth. Do not over blend.
4. Fill cupcake liners approximately 3/4 of the way.
5. Place chocolate chips on top.
6. Bake for 15 - 20 minutes
7. I checked mine at about 12 minutes and placed a few more chocolate chips on top.
